## How to use it

1. **Log the trigger** Record what prompted the review, such as a new menu item, a recipe change, or a different supplier.
2. **Re-check the ingredients** Work through the recipe and the supplier specifications and confirm which of the 14 allergens are present.
3. **Update your information** Amend the allergen matrix, reprint any PPDS labels, and brief the team on the change, then record it here.
4. **Sign off and set a review date** The reviewer signs the record and sets the next routine review so the information never drifts out of date.

## Tips

- Treat a supplier ingredient swap as a trigger, even when your recipe has not changed
- Check the supplier specification, not just the front of the pack, for may contain warnings
- Reprint PPDS labels straight away when an allergen changes, because the old label is now wrong
- Keep the review record next to your allergen matrix so the two stay in step
