## How to use it

1. **Confirm the food is PPDS** Check it is packed on the premises before being ordered, such as a sandwich made in the morning for the chilled cabinet.
2. **List ingredients in weight order** Write every ingredient from the recipe in descending order of weight, including the components of any made-up item.
3. **Emphasise the allergens** Make every one of the 14 allergens stand out in the list, in bold, so it cannot be missed.
4. **Add storage and use-by** Complete the storage instruction and use-by date, then attach the label to the pack before it goes out for sale.

## Tips

- Emphasise the allergen word itself, so write wheat (gluten) in bold rather than the whole line
- Break down compound ingredients, because a sauce can hide mustard, celery, or egg
- Use-by, not best-before, applies to the chilled high-risk items that are usually PPDS
